One of the most memorable desserts I've ever had the pleasure of eating was in a seaside restaurant a few miles east of St. Maxime on the french Riviera. It was of course, one of those small chocolate cakes, served hot, molten in the middle with a little creme fraiche on the side.
Here's my take on the dish:
Ingredients
175 g good quality plain chocolate
115 g butter
3 whole eggs
3 egg yolks
175 g icing sugar
90 g plain flour
icing sugar and cocoa powder for dusting
Start by pre-heating the oven to 200 C. Whilst the oven is warming up finely dice the plain chocolate with a good strong knife. Now combine the diced chocolate and butter into a micro-waveable dish and cook on high (assuming an 850 W oven) for 90 seconds. The chocolate should at this stage be melted. Now remove dish carefully and allow to cool for 5 minutes.
Whilst the chocolate-butter mix is cooling, whisk the whole eggs and egg yolks together. Now whisk in the egg mix with the chocolate mixture and whisk quicky to prevent the eggs cooking immediately. Add the icing sugar and flour and combine well.
Place the mixture into individual cake/muffin molds and bake in the oven for 12-14 minutes. Please don't bake any longer otherwise the molten centre will have cooked through.
Remove and invert each of the mini-cakes immediately, dust with icing sugar and cocoa powder and serve with a small helping of creme fraiche.
This is a fabulous dinner party dish, simple in its' execution, but memorable to eat. Your guest will be amazed and your reputation as a kitchen god/godess will increase accordingly!
