"Barbecued" salmon with a radish coleslaw

This is a simple, fast but delicious supper dish. Healthy, interesting, quick and above all else tasty!

Ingredients

125 ml cider vinegar

5 tblspoons runny honey

500 g radish

1 carrot

1 handfull of chopped parsley

4 skinless salmon steaks

2 tblspoons bbq seasoning

Sea salt and ground black pepper

1 tblspoon olive oil

Place the cider vinegar into a micro-waveable bowl and cook on high for 4 minutes (assuming a 850 watt oven). Remove carefully and whisk in the runny honey, and then cook for a further 3 minutes.

Whilst the cider and honey are cooking in the micro-wave finely slice the radish and julienne the peeled carrot. Finely chop the parsley, and mix well with the radish and carrot.

Lightly oil the salmon steaks , season and coat with the bbq seasoning. Brush a little of the cider/honey mix over the salmon and cook over a medium/high heat approximately 4 minutes each side.

Pour the remaining mix over the radish coleslaw and serve immediately.

Serve with a good white wine such as a nice Montagny from Burgundy.

I cooked this for dinner last night and added a little rocket to the carrot, radish and parsley salad. It was delicious!
