Throughout Europe, the wild strawberry (fragaria vesca) is a wonderful late summer treat, being much more intensely flavoured and fragrant than the garden variety. Here's an interesting but simple dish that takes a little preparation time but tastes fantastic!
The use of balsamic vinegar is perhaps slightly unusual, but from a taste perspective very welcome! Balsamic vinegar is made from the juice of the Trebbiano grape, cooked and then aged in wooden barrels for anything from 15 to 50 years!
Ingredients
500 g wild strawberries
150 g caster sugar
4 tablespoons good quality balsamic vinegar (or raspberry vinegar as an alternative)
4-8 mint leaves
Place the strawberries in a bowl with the sugar, mix well and allow them to macerate for up to an hour. At the point of serving, mix with the balsamic (or raspberry) vinegar, garnish with the mint leaves, sit down and enjoy a marvelous taste experience!
